Cheesecake Minis

This is a great recipe! Its super easy to make and doesn't require a lot of time. Take a cupcake pan and line it with cupcake liners. Then put a cookie, whichever kind you may be craving, at the bottom of each liner. Pour the cheesecake batter over the cookies, to the top of the liner and bake!

You will need:

2 8oz pkgs cream cheese (I always use original Philadelphia cream cheese)
1/2 cup sugar
1/2 tsp vanilla
2 eggs
12 cookies (I used Peanut Butter Cream and Oreos in different liners)
Fresh Fruit (optional)

Directions:

Mix softened cream cheese, sugar, and vanilla until smooth. Add one egg at a time. Mix well until smooth. Just before serving, top with fresh fruit (kiwis, berries, bananas, etc...)

Heat oven to 350 degrees and bake for 20 minutes.
Chill for at least 3 hours.

This recipe will make 12 mini cheesecakes

Keep in mind, if they look cracked, that's okay! Once they set you won't be able to tell.
